Caveau de Villaines
The Domaine de Villaines is a vineyard that extends more than 4,500 hectares, protected since 1996 as “The Coteaux de l’Auxois ». The Chablis domaine of Simmonnet-Febvre accquired 15 hectares of vineyards in the villages of Villaines-les-Prévôtes and Viserny, and mixed tradition and innovation to create great Burgundy wines. The vines enjoy a favourable exposure to the south / southeast, they are grown using the « Lyre » vine training system and are entirely harvested by hand. The designation « Coteaux de l’Auxois » is represented by four areas. The 14 hectares of Flavigny-Alesia, are located between Flavigny-sur-Ozerain (rated as one of the most beautiful villages in France), and the archaeological site of Alesia, the site of the famous battle between Vercingétorix and Caesar in 52 BC.
The vineyard was replanted in 1994 on a hill at Flavigny-sur-Ozerain, which had once more than 50 hectares of vines. It is in this historical environment that the wines of the Auxois were reborn.
The vines are grown using the lyre system. The vineyard has over several years adopted durable agricultural practices for man, for nature and for the vines.
